Elegant Equestrians Tasty Kick

A homemade square wedding cake with a lucky horseshoe topper was just the cake for equestrian friends of friends who were tying the knot. They wanted something sweet with a hint of heat like their personalities.

(NOTE FROM REVEREND MATTIE: By the way, a Celtic wedding ceremony includes lucky horseshoes. This themed cake could carry through the tradition perfectly.)

We decided to go with a dark chocolate butter cake for a densely rich flavor to which I added a touch of cinnamon and a dash of cayenne. The cake was filled with dulce de leche and chocolate buttercream. I covered it with fondant icing.

Next I planned the design to fit the top and one side together on a piece of paper. I then used the pattern and a toothpick to prick through the pattern into the fondant.

Buttercream icing was used to pipe the trellis and star decorations. Using a skewer I made a couple of holes on the homemade square wedding cake for the lucky horseshoe cake topper to secure. I did this after we positioned it on the cake table.
